Remove neck and organs from chicken if included.
Place chicken in a crock pot.
In a heavy skillet, add 1 tablespoon olive oil or butter.
Sauté the onions, celery, and carrots until almost tender.
Add veggies to the crock pot with the chicken.
Add the chicken broth and spices.
Add water until chicken is almost covered.
Cook on low for about 6 hours.
After 6 hours check the chicken to see if it is done.
It should be falling off the bone if done.
Pull the chicken out of the crock pot.
With two forks shred the meat off of the bones.
Return the meat to the crock pot then add the frozen egg noodles.
Turn crock pot to high and check after 30 minutes to see if the noodles are done.
Once the noodles are done turn off the crock pot and serve.
