Creamy Low-Carb Potato Substitute Salad

If you're looking for an alternative to high carb potato salad I found this recipe on line and modified it a bit. It is very tasty. It is a great substitute for regular potato salad.

Prepare the cauliflower by cutting the head into bite sized florets and steaming it in a silicone steamer or on the stove with a steaming basket.

Cook until the cauliflower is tender but still holds together.

Set aside to cool.

While the cauliflower is cooling make the dressing by whisking together the Sour Cream, Mayo, both mustards and the spices including the dill.

Put in refrigerator until ready to add.

In a small skillet at Medium heat, heat butter until melted.

Add to the melted butter the celery and Sweet onion.

Sauté until tender, but still a little crunch.

Add garlic and stir till fragrant, about 30 seconds.

Remove from burner and let cool slightly.

Put the cauliflower into a large bowl.

Add the onion and celery mixture.

Then add the sweet and dill relish and hard boiled eggs.

Fold in the dressing mixture until well combined.

Chill in the refrigerator for about 1 hour.

When ready to serve sprinkle the Green Onions and bacon on top.

Chef's notes: The original recipe did not have either pickle relish. I like the flavor and it is more like Potato salad with pickle relish added. Store in refrigerator for 2-3 days.
