Preheat oven to 350°.
Line baking sheets with parchment paper.
In a bowl combine the flour, baking soda, baking powder and salt, set aside.
With a mixer, cream together the butter & sugars until smooth and creamy, about 3 minutes.
Add egg and mix well.
Add vanilla and mix well.
Add dry ingredients and mix until well combined, don't over mix.
Use a rubber spatula to help it come together to form a cohesive ball.
Make 1 ½ T size balls.
On a separate plate, gently roll the dough balls in the additional sugar, then place on baking sheets.
Bake cookies 1 baking sheet at a time for 7-8 minutes.
Remove just before edges turn brown.
Allow to cool on baking sheet for 4-5 minutes, then transfer to wire rack to cool completely.
Chef's notes: The cookies will spread, and centers will look soft, but should be done. Don't overbake.
