Preheat oven to 350°.
Grease a baking dish, or line with tin foil and spray tin foil with cooking spray.
Make the stuffing by following the directions on the Stove Top Stuffing box.
When done, add drained mushrooms and set aside.
In a large heavy skillet, on medium high heat, add the oil and wait until oil is hot and shimmering.
Add the pork chops 2 at a time, don't overcrowd, and brown on both sides, about 3 minutes per side.
Remove from skillet and turn off the heat.
Remove pork chops and place on a platter.
Pour about ¼ cup water in the pan and deglaze, save liquid.
Place 2 of pork chops in the prepared baking dish.
Spoon ½ of the stuffing over the pork chops, place the other 2 pork chops on top of stuffing, then the remaining stuffing on the top and around sides.
Pour the deglazed liquid over the top, cover and bake for 45-60 minutes, or until internal temperature reaches 160°.
Remove from oven uncovered and let rest for 10 minutes before serving.
Chef's notes: This time will vary depending on the size of the pork chops.
